Chef Carroll Introduces “Fruit of the Month” to Hilton Anaheim

October 24, 2011

We recently introduced our new Executive Chef, Kyung Soo Carroll to you and he’s bringing a whole new approach to our hotel’s kitchen! One of his new ideas is to feature a “Fruit of the Month”! This month, Chef is featuring the fruit Rambutans! Have you heard of it? Here is Chef’s thoughts on this month’s fruit!

Fruit of the Month

Note from the Chef

This month I am Featuring Rambutan

I was first introduced to this fruit  in my culinary travels and work in Bangkok Thailand. Rambutan’s, are an oval shaped 3–6 cm tropical fruit in the Sapindaceae (Evergreen tree) family . It is native to Southeast Asia. It is closely related to several other edible tropical fruits such as a lychee.

The leathery skin is reddish and covered with fleshy pliable spines, hence the name rambutan, derived from the Malay word rambut which means hairs. The fruit flesh is translucent with a sweet, mildly acidic flavor.

Great to eat while sipping a glass of Chardonnay!
