You have probably seen the Bad Boy of the Food Network, Guy Fieri, on one of his hit shows Guy’s Big Bite, Diners, Drive Ins & Dives, or Ultimate Recipe Showdown. Guy, also known as America’s Rock N Roll chef, put on four cooking demo shows between August 8th and 9th at Hilton Anaheim.
Have you ever seen a cooking show kick off with a highly enthusiastic audience and two crowd surfing beach balls? If you have been to a live taping of Guy’s show you have!
Guy started the show off with his “brother from another mother”, Woody, the mixologist. Woody whipped up a 50/50 which includes orange juice concentrate, vanilla ice cream and vodka. What a way to start a morning! The guys began promoting the Guy Fieri Knuckle Sandwich Road Show that will start in Boston, go through Los Angeles and end in Las Vegas. Guy prepared a unique dish called Lomo Saltado which looked absolutely amazing! The dish includes jasmine rice topped with triple fried french fries, 2-3″ rib eye slices, roasted red/yellow bell peppers, and onions.
The secrets are in the french fries and the marinade. Everyone has had a french fry that looks delicious but after a few minutes it goes limp. The secret to crispy fries is to get the moisture out and in order to get the moisture out, they need to be double or better yet triple fried! Guy heats the cooking oil to 325 degrees and drops in the fries. After letting them cook for a 10 minutes he pulls them out and drops them onto a cookie sheet to rest for 3 minutes before dropping them back in and repeating this process two times over.
The marinade for the rib eye includes balsamic vinegar, soy sauce, corn starch, ginger, fish sauce and garlic. Guy explained the softer the meat, the greater the opportunity to over-marinate. He starts a wok and throws in the peppers, onions and tomato and later adds the rib eye and marinade. At the end, everything is thrown on top of jasmine rice and the results look and smell delicious.
Guy performed four demonstrations over two days and the audience loved him! Throughout the show giveaways were given out for audience participation. Items included aprons, t-shirts and the exclusive Guy Fieri Knuckle Sandwich Chef Knives which can now be pre-ordered.
