Sushi chef Nobumitsu Kajiwara – or “Kaji” as his regular customers call him – is serving up fresh and delicious sushi every night this week during NAMM in the new Mix Restaurant & Lounge from 6 p.m. to 10 p.m.
Chef Kaji has been preparing sushi for Hilton Anaheim guests for 24 years. His simple and high-quality menu includes sushi and sashimi with tuna, salmon, albacore, yellowtail and scallops. His slightly more exotic specialties include a California Roll with fresh dungeness crab and avocado and a top-notch smoked salmon roll.
